WHEAT BERRY WALDORF SALAD

I knew Bill and I liked this recipe but I had no idea it would go over as well as it did when I made it for our Blackwater Falls Workshop in WV. I must thank Whole Foods for their recipe. As usual, I altered it a little.

I use hard wheat berries which can be found in a lot of grocery stores and health food stores. You should soak them overnight - 6-8 hours - then rinse them and cook for about 50-60 minutes. They should be thoroughly cooked but still chewy. For this recipe:

1. Soak 2 cups of hard wheat berries overnight
2.. Rinse them and then cook them in 7 cups of boiling water for about 55-60 minutes. They will retain a firm, chewy texture.. Drain them and set aside.
3. Mix together:
1 red pepper diced
1 cup of chopped walnuts (you can use pecans too)
2 medium, crisp apples unpeeled, cored and chopped
1 cup of raisins
1cup of finely chopped parsley
1/4 cup of apple cider vinegar
1/4 cup of apple juice (might need a little more)
1 teaspoon of salt (to taste)
1/2 teaspoon of freshly ground pepper
1/2 teaspoon of ground nutmeg (I like a little extra)
1/2 teaspoon of cinnamon (again, I like a little extra)
1/2 cup extra-virgin olive oil (regular olive oil will do)
1/8 to 1/4 cup of lemon juice
(I like adding 1 cup of diced celery too)
4) Mix it all together and Serve
